Ingredients

3 cups (375 g) all-purpose flour

1 tablespoon sugar

2 teaspoons salt

1 packet (2 ¼ teaspoons) instant yeast

1 cup (240 ml) warm water (110°F/45°C)

2 tablespoons olive oil

2 tablespoons unsalted butter (melted)

4 cloves garlic (minced)

½ cup (50 g) grated Parmesan cheese

2 tablespoons fresh parsley (finely chopped)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh thyme (chopped)

Extra Parmesan and herbs for garnish (optional)

Execution

1

Prepare the Dough:
-In a large mixing bowl, combine flour, sugar, salt, and yeast.
-Add warm water and olive oil. Mix until a dough forms.
-Knead the dough on a floured surface for about 8–10 minutes, until smooth and elastic.

2

First Rise:
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

3

Prepare Garlic Herb Butter:
In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1 minute, until fragrant. Remove from heat and stir in parsley, rosemary, and thyme.

4

Shape the Bread:
-Punch down the risen dough and roll it out into a rectangle (about 12×8 inches).
-Brush the garlic herb butter over the surface, reserving a little for later. Sprinkle Parmesan cheese evenly over the dough.
-Roll the dough tightly into a log and pinch the seams to seal.

5

Second Rise:
Place the rolled dough onto a parchment-lined baking sheet or in a greased loaf pan. Cover and let rise for 30–45 minutes, until puffy.

6

Bake the Bread:
-Preheat the oven to 375°F (190°C). Brush the top of the bread with the remaining garlic herb butter.
-Bake for 25–30 minutes, or until golden brown and hollow-sounding when tapped.

7

Cool and Serve:
Allow the bread to cool for 10 minutes before slicing. Garnish with extra Parmesan and herbs if desired.

Additional tips

  • For a shortcut, you can use store-bought hollandaise sauce, but preparing it from scratch adds an authentic touch.
  • Experiment with different types of smoked salmon for varied flavors, such as dill-infused or peppered varieties.
  • Ensure your eggs are as fresh as possible for the best poaching results.
  • If you prefer a non-traditional twist, consider adding a sprinkle of capers or a dash of hot sauce for extra zing.
  • Serve with a side of mixed greens or a light fruit salad to balance the richness of the dish.
